MANAGING DIRECTOR
As a hospitality professional with over 22 years experience in the cafe industry, David Haddad of Ecco Enterprises, is highly qualified to successfully deliver on all new & existing cafe operations from the concept design and fit-out through to the human resource structures and the unique dynamics of food and beverage service delivery in a cafe style format.
Ecco Enterprises has extensive knowledge in all facets of cafe operations and has a proven track record in developing, owning and operating some of Melbourne’s most successful cafes. The team that supports Ecco Enterprises is widely experienced in all aspects of the food and beverage industry.

Jeremy Bartholomews
Operations Manager
Manager, Qualified Chef, Barista, Food Safety Supervisor, OH and S Officer.
Before joining Ecco, Jeremy was an owner / operator of a successful restaurant in Albert Park Melbourne. Jeremy has over 23 years’ experience in food and hospitality industry both here in Australia, Europe and Asia. He has an extensive knowledge of food and specialises in corporate catering and functions.
Sean Trinder
OPERATIONS MANAGER
Advanced Diploma Business Marketing, Qualified Barista, Owner/Operator café outlets. Food Safety Officer and RSA Certificate.
Over 15 years’ experience in café industry having owned and operated café outlets in Melbourne’s CBD and recently working as Operations Manager for Ecco Enterprises coordinating the daily function of 3 premium outlets.
Board member for 4 years at Compass Church Melbourne (Australian Christian Churches).
Nick Nicolopolous
SITE MANAGER & BARISTA
Qualified Chef, Barista and Food Safety Supervisor.
Nick is a Café Manager, qualified chef and barista with over 13 years’ experience in the cafe industry and has worked with Ecco Enterprises for the majority of his career.
Kim Pindea
CATERING MANAGER
HACCP Accredited, Food Safety Supervisor, Cook, OHS Officer.
Kim has over 18 years’ experience in the food and beverage industry and has worked with Ecco Enterprises for ten years. Having owned and operated her own cafes in Melbourne, Kim has expertise in all facets of cafe operations and a strong focus on food quality, preparation, merchandising, food safety and hygiene.
Brad Hennessy
Project Manager
Brad is a highly qualified project manager who focuses on building liaison & OHS.
